Recipe Peppered mackerel risotto Ingredients 250g Arborio rice 700ml stock (chicken or fish) 200ml white wine 2 peppered mackerel fillets red chilli

1⁄4 teaspoon salt

lemon zest and juice in a bowl

in a non-stick frying pan heat the olive oil and butter

add halibut skin side down and drizzle with oil

drizzle with the olive oil and lemon juice

1⁄4 teaspoon garlic powder

For the salad

6-8 large floury potatoes

• 1 tbsp chopped parsley

smoked mackerel

1 x 500g pack Haddock Singles

place a spoonful of salad onto each plate and top with a hot fishcake
